Norwegian Salmon Fettuccini with Spicy Tomato and Roasted Red Pepper Sauce

Simple, spicy salmon fettuccini flavored with a rich sauce of garlic, onion, and tomato-roasted red pepper

Ingredients:

  • 1 lb Norwegian Salmon , skin removed, 1” cubes
  • 14.5 oz can whole tomatoes, prepared
  • 1 1/2 cups roasted red peppers, prepared
  • 2 tbsp garlic, minced
  • 3/4 cup onion, small dice
  • 1/2 cup extra virgin olive oil
  • 1 tsp chili flakes
  • 1 lb fettuccini pasta
  • 1/2 cup basil, chopped
  • salt, to taste
  • pepper, to taste

Directions:

  1. Drain canned tomatoes and reserve juice. Put canned tomatoes and roasted peppers in food processor and process until pureed but still chunky
  2. In large pot, sauté garlic and onions with no color for 2-3 minutes
  3. Add tomato/red pepper mixture, 1/2 of reserved tomato juice and chili flakes. Season with salt and pepper. Cook for 15–20 minutes
  4. While sauce is cooking, cook pasta according to instructions on box
  5. Add salmon to sauce and cook for another 3–4 minutes
  6. Add basil to sauce. Toss pasta with sauce and serve

  1. Serve with sautéed spinach with garlic
